Instructions
Marinate the Tuna: Coat the tuna steaks with 1 tablespoon of soy sauce and let them sit at room temperature for at least 10 minutes, or up to 30 minutes if time allows.
Preheat the Pan: Heat a large skillet over medium-high heat until very hot.
Coat the Tuna: Pat the tuna steaks dry and rub them with 1 tablespoon of sesame oil. Press them into a plate of everything bagel seasoning until fully coated. Add more seasoning if needed.
Sear the Tuna: Add neutral oil to the hot skillet, swirling to coat. Sear the tuna steaks for 1 to 2 minutes per side, until the seeds turn golden brown. Flip and cook the other side for another 45 seconds to 1 minute. Transfer to a cutting board and let rest.
Cook the Snap Peas: Lower the heat to medium and add the remaining 1 tablespoon of sesame oil. When shimmering, toss in the snap peas. Grate the garlic and zest half the lime directly into the pan. Cook for about 4 minutes, stirring occasionally, until crisp-tender. Stir in 1 tablespoon of soy sauce before removing from heat.
Prepare the Sauce: In a small jar, combine gochujang, tahini, honey, and the remaining 1 tablespoon of soy sauce. Squeeze in the juice from the zested lime half. Cover the jar and shake well until smooth.
Slice & Serve: Cut the tuna into ½-inch thick slices and divide among four plates. Serve with the sautéed snap peas and a side of the tahini-jang sauce for dipping or drizzling.
Notes
Making the Sauce Smoother: If the tahini is too thick, add a splash of water to thin it out.Adjusting Spice Levels: Add extra soy sauce and honey if the sauce is too spicy. If it's too thin, mix in more tahini.Ingredient Swaps: Substitute snap peas with snow peas, frozen peas (shorter cooking time), green beans (longer cooking time), or asparagus (same cooking time).
