Easy Dilly Chop Salad Recipe

This refreshing salad features crisp romaine, savory Manchego cheese, tangy salami, and crunchy pistachios, all tied together with a homemade vinaigrette.

Ingredients
  

Vinaigrette:

  • cup extra-virgin olive oil
  • ¼ cup apple cider vinegar
  • 2 tablespoons mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon kosher salt
  • Several grinds of black pepper

Salad:

  • 2 heads romaine lettuce
  • 1 cup pitted Castelvetrano olives
  • 6 ounces Manchego cheese
  • 4 ounces salami
  • ½ cup roasted, salted pistachios
  • 1 bunch fresh dill
  • A few handfuls of salt and vinegar chips

Instructions
 

  • Prepare the Vinaigrette: In a jar with a tight-fitting lid, combine the olive oil, apple cider vinegar, mayonnaise, honey, Dijon mustard, salt, and pepper. Close the lid securely and shake vigorously for about 30 seconds until well mixed. Taste and adjust seasonings as needed.
  • Chop the Ingredients: Thinly slice the romaine and place it in a large bowl. Finely chop the olives and salami, shred the Manchego cheese, and add them to the bowl along with the pistachios.
  • Dress the Salad: Chop the dill and add it to the mixture. Pour in the vinaigrette, starting with ½ cup, and toss everything together until evenly coated. Use tongs to ensure the dressing is well distributed.
  • Add the Crunch: Right before serving, crumble the salt and vinegar chips over the salad, creating a crunchy, flavorful topping. Serve immediately and enjoy!

Notes

Customize the Vinaigrette: If you prefer a tangier dressing, increase the vinegar. Want it a bit sweeter? Add extra honey.
Seasonal Additions: Swap in crisp vegetables like raw green beans in the summer or thinly sliced beets in the winter for variety. Fennel would also be a great addition!
Cheese Alternatives: If Manchego isn’t available, try Parmesan or Pecorino for a similar salty bite.
