  • 6 Roma tomatoes diced
  • 1 bell pepper any color, stemmed, seeded, and diced
  • 1 medium yellow onion finely diced
  • 1 large avocado pitted, peeled, and diced
  • 1 15-ounce can corn, drained (or kernels from 1 cooked cob of corn)
  • 1 15-ounce can black beans, rinsed and drained
  • ½ cup chopped fresh cilantro leaves
  • 2 jalapeño peppers stemmed, seeded, and finely diced
  • ½ cup store-bought light Italian dressing
  • 3 tablespoons freshly squeezed lime juice plus more to taste
  • 4 medium garlic cloves pressed or grated
  • 1 teaspoon fine sea salt plus more to taste
  • Tortilla chips for serving

Instructions
 

  • In a large mixing bowl, combine the diced tomatoes, bell pepper, onion, avocado, corn, black beans, cilantro, and jalapeños.
  • Pour in the Italian dressing, lime juice, garlic, and salt. Mix thoroughly to coat all ingredients evenly.
  • Taste and adjust seasoning with additional lime juice or salt as needed.
  • Serve immediately with tortilla chips, or refrigerate for up to 24 hours for the flavors to meld.
