Ingredients
  

  • cup packed light brown sugar
  • 2 tablespoons salted butter at room temperature
  • 1 tablespoon brandy or bourbon
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 sheet frozen puff pastry thawed
  • 2 large or 3 small Honeycrisp apples cored, halved, and thinly sliced
  • 2 tablespoons melted butter for brushing
  • Vanilla ice cream for serving (optional)

Instructions
 

  • Preheat the Oven and Prepare the Baking Sheet: Heat the oven to 400°F. Line a rimmed baking sheet with parchment paper for easy cleanup.
  • Blend the Sugar Mixture: In a small bowl, combine the brown sugar, softened butter, brandy (or bourbon), vanilla extract, and ground cinnamon. Stir until the mixture is smooth and well-blended.
  • Cut and Arrange the Puff Pastry: Divide the thawed puff pastry into six equal rectangles and lay them out on the prepared baking sheet. Spread about 2 teaspoons of the sugar mixture over the surface of each piece of pastry.
  • Add the Apple Slices: Place thinly sliced apples, with the skin side facing up, onto each rectangle of pastry. Fold the edges of the pastry inward, gently pressing the corners together to hold their shape. Drizzle the remaining sugar mixture evenly over the apples, ensuring they are well-coated. Brush the edges of the pastry with melted butter for a golden finish.
  • Bake the Tarts: Bake the tarts for 25 to 30 minutes, or until the puff pastry is puffed and golden brown and the apples are tender and caramelized.
  • Serve and Store: Serve the tarts warm, optionally topped with a scoop of vanilla ice cream. Leftovers can be stored at room temperature in an airtight container for up to three days.

Notes

  • If you forget to thaw the puff pastry, microwave it in 1-minute intervals on power level 1, flipping after each minute, until thawed. It usually takes 2–3 minutes per sheet.
  • Smaller apples like Honeycrisp create a beautiful fanned effect and fit perfectly on the pastry.
