Equipment

  • Stand mixer with whisk attachment
  • Small serving bowls (4 to 6)

Ingredients

Chocolate Mousse:

  • 4 ounces cream cheese at room temperature
  • 1 cup heavy cream
  • ½ cup whole milk
  • cup unsweetened cocoa powder
  • ¼ cup confectioners' sugar plus more as needed
  • 2 teaspoons pure vanilla extract

Whipped Crème Fraîche:

  • 4 ounces crème fraîche
  • 2 teaspoons confectioners' sugar

Garnish:

  • Milk or dark chocolate shavings

Instructions

Prepare the Mousse:

  • Using a stand mixer with the whisk attachment, combine the cream cheese and heavy cream. Whip at high speed until the mixture forms soft peaks, which will take around 3 to 5 minutes.
  • Lower the mixer speed to medium, then gradually add the whole milk, cocoa powder, ¼ cup of confectioners' sugar, and vanilla extract. Mix until everything is smooth and well blended, about 1 to 2 minutes. Taste the mixture, and if needed, add a bit more confectioners' sugar to adjust sweetness.
  • Spoon the mousse into four to six small serving bowls. Cover them with plastic wrap and place in the refrigerator to chill for at least 1 hour or up to 3 days.

Make the Whipped Crème Fraîche:

  • In the same stand mixer (no need to clean it), combine the crème fraîche with 2 teaspoons of confectioners' sugar. Whisk on high speed until the mixture becomes fluffy, which should take about 1 minute.

Assemble and Serve:

  • Once the mousse has chilled, top each bowl with a dollop of the whipped crème fraîche.
  • Add a garnish of chocolate shavings to finish. Serve and enjoy!

Notes

  • Ensure the cream cheese is at room temperature for a smooth mousse texture.
  • For a deeper chocolate flavor, use dark cocoa powder instead of regular cocoa.
  • The mousse can be made up to three days in advance and stored covered in the refrigerator.
