Ingredients
  

Basic Version:

  • 2 lbs beef (top round or flank steak)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon garlic powder

Strict Carnivore Version:

  • 2 lbs beef (top round or flank steak)

Instructions
 

  • Place the beef in the freezer for 1-2 hours until partially frozen to make slicing easier.
  • Slice the beef against the grain into 1/8 to 1/4 inch (3-6 mm) strips.
  • In a mixing bowl, combine all dry spices.
  • Coat the beef strips thoroughly with the spice mixture. For the strict carnivore version, use only salt and pepper.
  • Refrigerate the coated beef strips for at least 1 hour or overnight for better flavor absorption.
  • Preheat the food dehydrator to 165°F.
  • Arrange the beef strips on the dehydrator trays, ensuring space between each piece for proper airflow.
  • Dehydrate for 4-6 hours, checking periodically, until the jerky is dry but still pliable.
  • Allow the jerky to cool completely before storing.
