Easy Carnivore Diet Salmon Patties

3 slices bacon or salted pork belly 2 cans salmon 6 oz each, drained 6 ounces crushed pork rinds 6 ounces pulled pork from Boston Butt 1 teaspoon salt 2 eggs whisked Optional Additions: Juice of 1/2 lemon 1/2 tsp dill

Cook the bacon or salted pork belly until crispy. Set it aside, and reserve the grease.
Once cooled, crumble the bacon into a medium mixing bowl.
Add the drained salmon, salt, and whisked eggs to the bowl. If desired, include the lemon juice and dill.
Using an empty salmon can, measure 6 oz of pulled pork and add it to the mixture.
Place pork rinds in a ziplock bag and crush them with a mallet or large spoon. Measure 6 oz of the crushed pork rinds using the salmon can.
Add the crushed pork rinds to the bowl and mix thoroughly by hand until all ingredients are well combined.
Form the mixture into 4-6 burger-sized patties.
Heat the reserved bacon grease in a skillet over medium-high heat.
Cook the patties until golden brown, turning every couple of minutes to ensure even cooking.
