Easy Carnivore Diet Salmon Patties

Equipment

  • Medium mixing bowl
  • Skillet or frying pan
  • Ziplock bag
  • Mallet or large spoon
  • Empty salmon can (for measuring)
  • Spatula

Ingredients
  

  • 3 slices bacon or salted pork belly
  • 2 cans salmon 6 oz each, drained
  • 6 ounces crushed pork rinds
  • 6 ounces pulled pork from Boston Butt
  • 1 teaspoon salt
  • 2 eggs whisked
  • Optional Additions: Juice of 1/2 lemon 1/2 tsp dill

Instructions
 

  • Cook the bacon or salted pork belly until crispy. Set it aside, and reserve the grease.
  • Once cooled, crumble the bacon into a medium mixing bowl.
  • Add the drained salmon, salt, and whisked eggs to the bowl. If desired, include the lemon juice and dill.
  • Using an empty salmon can, measure 6 oz of pulled pork and add it to the mixture.
  • Place pork rinds in a ziplock bag and crush them with a mallet or large spoon. Measure 6 oz of the crushed pork rinds using the salmon can.
  • Add the crushed pork rinds to the bowl and mix thoroughly by hand until all ingredients are well combined.
  • Form the mixture into 4-6 burger-sized patties.
  • Heat the reserved bacon grease in a skillet over medium-high heat.
  • Cook the patties until golden brown, turning every couple of minutes to ensure even cooking.
