Easy Carnivore Diet Mac & Cheese

For the "breadcrumbs": 2.5 oz pork rinds pre-ground 2 oz raw cheese grated For the "mac": 2 eggs 1 lb raw ground chicken Grass-fed ghee for pan-frying Sea salt to taste For the cheese sauce: 6 oz cheese your choice of hard cheese 1 cup milk or cream 2 tsp yellow mustard optional 1 tbsp fresh lemon juice optional Sea salt to taste

Prepare the "Breadcrumbs" Blend pork rinds into a fine powder in a blender.
Grate 2 oz of cheese using a vegetable grater.
Combine pork rind powder and shredded cheese, mix well with hands.
Set mixture aside.
Create the "Mac" Blend ground chicken, eggs, and sea salt until it forms a smooth paste.
Transfer mixture to a freezer bag or piping bag.
Remove air and push mixture to one corner.
Cut a small opening in the corner of the bag.
Cook the "Mac" Heat 1-2 tablespoons ghee in a pan over medium-high heat.
Pipe small dollops of chicken mixture into hot pan.
Fry until golden brown, about 1-2 minutes per side.
Add more ghee as needed.
Transfer cooked pieces to 8" cast iron pan.
Prepare Cheese Sauce Preheat oven to 400°F.
Bring milk or cream to a boil in a pot, stirring constantly.
Gradually add remaining 6 oz cheese while stirring.
Add mustard, lemon juice, and sea salt.
Remove from heat once fully combined.
Assemble and Bake Pour cheese sauce over fried chicken pieces.
Top with prepared breadcrumb mixture.
Bake at 400°F for 10 minutes.
Switch to broil for 30-60 seconds until breadcrumbs brown (watch carefully).
Remove from oven and let cool 10-15 minutes.
Finish and Serve Garnish with fresh chives (optional).
Serve immediately while hot.
Store leftovers in airtight container for 2-3 days.
