Instructions
Set the oven to 400°F and prepare a 12-cavity muffin tin with cooking spray or melted butter to prevent sticking.
In a clean, dry mixing bowl, combine the egg whites with water.
Using an electric mixer or whisk, beat the egg whites until stiff peaks form (3-4 minutes with a mixer or 6-8 minutes by hand). The egg whites should be glossy and hold their shape.
Gently distribute the whipped egg whites evenly among the 12 muffin cavities, maintaining the air bubbles in the mixture.
Sprinkle shredded cheese on top of each portion.
Place the muffin tin in the oven and bake for about 20 minutes, or until the tops turn golden brown and crispy.
Remove from the oven and allow the chips to cool in the tin for 5 minutes. Carefully remove each chip and serve warm.
