These Black Pepper Buffalo Cauliflower Bites are a delicious and easy food recipe, perfect for game days or as a spicy appetizer. Coated in a smoky, black-pepper-infused buffalo sauce and baked until crispy, these bites are paired with a quick homemade ranch for an irresistible dish.

Instructions
Preheat the oven: Start by setting your oven to 425°F and lining a rimmed baking sheet with parchment paper to prevent sticking.
Prepare the buffalo sauce: In a medium mixing bowl, whisk together the olive oil, hot sauce, smoked paprika, freshly ground black pepper, garlic powder, and a pinch of kosher salt until well blended.
Season the cauliflower: Place the cauliflower florets in a large bowl and drizzle half of the prepared buffalo sauce over them. Mix thoroughly to ensure all the florets are evenly coated. Set aside the remaining sauce for later use.
Coat with bread crumbs: In a separate shallow bowl, combine the panko bread crumbs and grated Parmesan cheese. Roll each coated cauliflower floret in the bread crumb mixture, pressing gently to help the crumbs stick. Arrange the breaded florets in a single layer on the prepared baking sheet.
Bake the cauliflower: Transfer the baking sheet to the preheated oven and roast the florets for approximately 20 minutes, or until they are golden brown and tender. Remove the baking sheet from the oven, sprinkle the grated cheddar cheese over the florets, and return it to the oven. Bake for another 10–15 minutes, or until the cheese has melted and the bites are crisp.
Prepare the ranch dip: While the cauliflower is baking, make the ranch dressing. In a medium bowl, combine the Greek yogurt, buttermilk, fresh chives, dill, kosher salt, and freshly ground black pepper. Whisk until smooth. Add more buttermilk to adjust the consistency if necessary. Taste the dip and adjust the seasoning to your preference.
Serve and enjoy: Once the cauliflower bites are done, remove them from the oven. For presentation, garnish with additional freshly ground black pepper and a sprinkle of chives if desired. Serve immediately alongside the homemade ranch dip for the perfect combination of flavors.
