Ingredients
  

  • ½ cup packed 3½ ounces dark brown sugar
  • ¼ cup plus 2 teaspoons aged rum divided
  • 2 tablespoons water
  • 1 cinnamon stick
  • ¼ teaspoon table salt
  • 3 ripe bananas peeled, halved crosswise, then halved lengthwise
  • 1 pint vanilla ice cream
  • 4 tablespoons unsalted butter cut into 4 pieces
  • 1 teaspoon lemon juice

Instructions
 

  • In a 12-inch skillet, bring sugar, ¼ cup rum, water, cinnamon stick, and salt to a simmer over medium heat. Whisk frequently until the sugar completely dissolves, about 2 minutes.
  • Add bananas, cut sides down, and cook until the sauce is glossy and the cut sides are golden brown, about 2 to 4 minutes. Flip bananas and cook until soft but not mushy, about 2 to 3 minutes longer. Divide bananas among 4 bowls and top with ice cream.
  • Remove from heat and discard the cinnamon stick. Whisk in butter, one piece at a time, until fully incorporated. Whisk in lemon juice and remaining 2 teaspoons rum. Spoon sauce over bananas and ice cream. Serve immediately.
