Easy Baked Brioche French Toast Recipe with Fruit Jam

For the Any Fruit Jam:
6cupsfresh fruite.g., berries, stone fruit, or apples
¼cuppure maple syrup or honey

Instructions
To Make the French Toast:
Prepare the Baking Dish: Grease a 9 x 13-inch baking dish. Mix maple syrup, 1 tablespoon of sugar, and melted butter in the dish.
Soak the Bread: In a large bowl, whisk together eggs, coconut milk, bourbon (if using), vanilla, 1 teaspoon cinnamon, and salt. Submerge each bread slice in the egg mixture for at least 1 minute. Arrange the bread in the baking dish, then pour the remaining egg mixture evenly over the slices.
Top with Butter Mixture: Combine softened butter, 1 tablespoon sugar, and remaining 1 teaspoon cinnamon. Spread this mixture over the bread slices. Cover with foil or plastic wrap and refrigerate for 1 hour or up to overnight.
Bake: Preheat the oven to 375°F (190°C). Bake for 45–50 minutes until golden and crisp. If browning too quickly, loosely cover with foil.
Serve: Top with fruit jam and whipped cream (optional).
To Make the Any Fruit Jam:
Cook the Jam: In a small saucepan, combine fruit, maple syrup, and lemon juice. Bring to a boil, then simmer for 5–8 minutes, mashing with a fork or potato masher. Reduce by one-third.
Store: Transfer to an airtight jar and refrigerate for up to 2 weeks.
Notes
This recipe can be customized with any type of bread or seasonal fruits.
The bourbon adds a rich depth to the custard, but it can be omitted for a non-alcoholic version.
