Ingredients
  

For the Lemon Dressing:

  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon fine sea salt plus more to taste
  • 1/8 teaspoon freshly ground black pepper

For the Salad:

  • 6 slices regular-cut bacon
  • 1 pound cooked chicken breast shredded or chopped (approximately 3 cups)
  • 2 large avocados pitted, peeled, and diced
  • 1 cup cooked or canned corn
  • 1/4 cup chopped fresh chives or green onions
  • 2 tablespoons chopped fresh dill
  • 3 hard-boiled large eggs peeled and quartered (optional)

Instructions
 

  • Make the Dressing: In a bowl, mix the lemon juice, olive oil, sea salt, and black pepper until the ingredients are blended. Taste the mixture and adjust the seasoning if needed. Set the dressing aside.
  • Cook the Bacon: Heat a medium skillet over medium heat. Fry the bacon strips for around 3 minutes per side, or until they turn crispy and golden. Once cooked, transfer the bacon to a plate lined with paper towels to drain excess grease. When cool, chop the bacon into small pieces.
  • Assemble the Salad: Combine the shredded chicken, diced avocado, bacon pieces, corn, chives, and dill in a large bowl. Drizzle the prepared dressing over the mixture, then gently toss everything together to ensure even coating. If you’d like, garnish with quartered hard-boiled eggs before serving.

Notes

Ingredient Substitutions: For convenience, rotisserie chicken or well-drained canned chicken can be used. Alternatively, grill or pan-sear chicken breasts seasoned with salt and pepper for added flavor.
Storage Tip: This salad is best enjoyed fresh due to the avocados. If storing, keep the dressing separate to avoid sogginess.
