Scramble the Eggs: Wipe out the skillet, melt butter over medium heat, and add the whisked eggs. Cook gently, stirring with a rubber spatula, until fluffy but just set (about 2 minutes). Fold in the cheddar cheese and transfer to a plate.
Assemble the Tacos: Layer the tortillas with spinach, scrambled eggs, avocado slices, crispy bacon, shallots, and green onions. Serve with lime wedges and chipotle salsa.
Chipotle Salsa Preparation:
Combine tomatoes, chipotle peppers, and sesame seeds in a blender or food processor. Pulse until smooth (about 1 minute).
