Begin by thoroughly washing and drying your apples.
Mix two tablespoons of fresh fruit or lemon juice to prevent browning in 2 quarts of water.
Carefully peel and core the apples, removing all seeds and stems.
Slice the apples into even pieces, either 1/4 or 1/2 inch thick, depending on your preference.
Submerge the apple slices in the fresh fruit and water mixture to prevent oxidation.
Arrange the apple slices on the dehydrator tray, ensuring they do not overlap. Sprinkle cinnamon over the slices for added flavor.
Set your dehydrator to the fruit and vegetable setting, typically from 135°F to 145°F. Allow the dehydrator to run until the apple slices have reached a chewy and leathery texture. This process usually takes between 8 to 12 hours, depending on the thickness of the slices and the humidity in your environment.
Once the apple rings are fully dehydrated, remove them from the dehydrator and let them cool completely.

Using the Oven:
