Ingredients
  

  • ½ lb steak ribeye or sirloin, cut into bite-sized cubes
  • 2 large eggs
  • 2 tbsp tallow or clarified butter
  • Salt to taste
  • ¼ tsp black pepper optional for flexible carnivore

Instructions
 

  • Preheat the air fryer to 400°F.
  • Cook the steak bites: Toss steak cubes with 1 tbsp of melted tallow or clarified butter. Season with salt (and black pepper for a flexible version). Place steak in the air fryer basket in a single layer. Cook for 8-10 minutes, shaking the basket halfway through, until crispy and browned.
  • Fry the eggs: While steak bites cook, melt 1 tbsp tallow or clarified butter in a skillet over medium heat. Crack eggs into the skillet and fry for 3-5 minutes until whites set while yolks remain runny.
  • Serve: Plate crispy steak bites with fried eggs on top. Serve hot.

Notes

Variations (Flexible Carnivore Diet)

  • Cheesy Steak Bites: Sprinkle grated Parmesan over steak bites during the last minute of air frying for a cheesy crust.
  • Spicy Steak Bites: Add cayenne pepper or chili flakes to steak bites before cooking for extra heat.
