Ingredients
  

  • 6 bone-in, skin-on chicken thighs (about 3 pounds)
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons dried rosemary
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons ground coriander
  • ¾ teaspoon dried oregano
  • teaspoon salt

Instructions
 

  • Preheat the oven to 450°F and prepare a baking sheet by lining it with parchment paper.
  • In a large bowl, mix the olive oil, dried rosemary, cumin, coriander, oregano, and salt until combined into a paste.
  • Add the chicken thighs to the bowl and toss until they are evenly coated with the spice mixture.
  • Place the seasoned chicken thighs on the prepared baking sheet in a single layer.
  • Bake for 30 to 35 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F when measured with a meat thermometer.
  • Remove from the oven and let rest for 5 minutes before serving.
