Instructions
Preheat your oven to 400°F.
Heat a large cast-iron skillet or another oven-safe pan over medium-high heat until it just starts to smoke, about 5 minutes.
Pat the chicken thighs dry with paper towels, then season both sides generously with kosher salt.
Add the bacon grease to the hot pan, swirling to coat the surface, and place the chicken thighs skin-side down in the pan.
Cook the thighs undisturbed for about 8 minutes, or until the skin is golden and crispy.
Flip the chicken thighs and immediately transfer the skillet to the preheated oven.
Bake for 18 to 20 minutes, or until the chicken is cooked through, with an internal temperature of 165°F. The meat should no longer be pink at the center. Serve immediately.
