Ingredients
  

  • 3 ⅔ cups bleached cake flour
  • 2 sticks unsalted butter softened
  • 2 cups sugar
  • 1 tablespoon baking powder
  • 1 tablespoon potato flour
  • 1 teaspoon kosher salt
  • ½ cup egg yolks at room temperature
  • teaspoons vanilla extract
  • 1 1/3 cups milk at room temperature
  • 3 cups fudge frosting

Instructions
 

  • Preheat the oven to 350°F and position the rack to the middle. Line two 8-inch pans with parchment paper and lightly grease.
  • Sift the cake flour and potato flour together.
  • In a stand mixer, cream the butter, sugar, baking powder, and salt until light and fluffy.
  • Add egg yolks one at a time, then vanilla extract, mixing well.
  • Reduce the speed to low, and alternate adding the milk and flour mixture in thirds until just combined.
  • Divide the batter evenly into pans and smooth the surface.
  • Bake for about 40 minutes or until a toothpick comes out clean.
  • Cool the cakes in the pan for 10 minutes before inverting onto a rack.
  • Frost with fudge frosting and decorate as desired.
