Ingredients
  

Base:

  • 3 ounces chocolate wafer cookies crumbled
  • ½ cup 2 ounces granola, crushed into small pieces
  • ¼ cup 1 ounce confectioners’ sugar
  • 2 tablespoons unsalted butter
  • ½ cup smooth peanut butter divided

Topping:

  • 2 ounces semisweet chocolate chopped

Instructions
 

Prepare Pan:

  • Create a foil sling by layering two sheets of aluminum foil in the loaf pan, placing them perpendicularly, with edges hanging over for easy lifting. Smooth foil flush to the pan.

Make the Base:

  • In a food processor, pulse chocolate wafer cookies until finely ground.
  • Add crushed granola and confectioners’ sugar. Mix until combined.
  • In a microwave-safe bowl, melt butter (about 30 seconds). Whisk in 6 tablespoons of peanut butter until smooth.
  • Pour the peanut butter mixture into the wafer-granola blend, stirring until evenly combined.
  • Transfer the mixture to the prepared loaf pan, pressing it firmly into an even layer.
  • Freeze uncovered for about 20 minutes until firm.

Add Chocolate Layer:

  • In a clean microwave-safe bowl, melt semisweet chocolate at 50% power, stirring every 30 seconds until smooth (about 2 minutes).
  • Spread melted chocolate evenly over the chilled base.
  • In another bowl, microwave the remaining 2 tablespoons of peanut butter until warm, about 1 minute. Drizzle this over the chocolate layer.
  • Freeze again for around 10 minutes until chocolate is set.

Serve:

  • Use the foil sling to lift the bars out of the pan.
  • Slice into two-inch squares and serve. Store any leftovers at room temperature for up to two days.

Notes

  • For a richer flavor, you can substitute milk chocolate for semisweet chocolate.
  • Be sure to use smooth peanut butter, not crunchy, for the best texture.
  • Avoid using granola with dried fruit, as it may alter the texture of the bars.
