Ingredients
  

  • 16 crispy whole wheat graham crackers
  • 2 cups chopped dark milk, or white chocolate
  • 16 cubes buttered vanilla marshmallows or any variation of marshmallow

Instructions
 

  • Prepare the Graham Crackers: Arrange the graham crackers on a baking sheet, bottom side up.
  • Temper the Chocolate: Melt and temper the chocolate using standard tempering techniques (melting over low heat and gradually cooling).
  • Coat the Crackers: Spread 1 heaping tablespoon (approximately ¾ ounce) of tempered chocolate onto each graham cracker using an offset spatula. Smooth from edge to edge. Refrigerate for 15 minutes until the chocolate hardens.
  • Toast Marshmallows: Skewer two marshmallows on a bamboo stick and toast them over an open flame until golden brown, turning frequently for an even char.
  • Assemble the S’mores: Place the toasted marshmallows between two chocolate-coated graham crackers, chocolate sides inward. Gently press to sandwich the marshmallows.
  • Serve Immediately: Enjoy warm for the best gooey texture.
