Ingredients
  

Basic Version:

  • 3 medium ripe bananas approx. 12 oz
  • 2 large eggs
  • ¼ cup nut butter (almond, peanut, cashew, or sunflower seed butter)
  • cup granular sweetener (monk fruit or brown sugar)
  • 1 tsp vanilla extract
  • tsp sea salt
  • 1 ½ cups oat flour (or preferred flour)
  • ½ cup cocoa powder
  • 2 tsp baking powder
  • ¼ cup chocolate chips

High-Protein Option:

  • Replace ½ cup of the oat flour with ½ cup protein powder

Instructions
 

  • Preheat your oven to 350°F. Prepare a 8-inch loaf pan by lining it with parchment paper or lightly greasing it.
  • In a large mixing bowl, mash the ripe bananas until smooth using a fork or potato masher.
  • Add eggs and nut butter to the mashed bananas, stirring until well combined.
  • Mix in the sweetener, vanilla extract, and salt. Whisk the mixture for 1–2 minutes until smooth and cohesive.
  • Add oat flour (or oat flour + protein powder), cocoa powder, and baking powder. Stir gently until just combined.
  • Fold in chocolate chips, saving a few to sprinkle on top if desired.
  • Pour the batter into the prepared pan and level the top.
  • Optionally sprinkle extra chocolate chips on top.
  • Bake for 30–40 minutes or until a toothpick inserted in the center comes out clean.
  • Let the loaf cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Possible Substitutions:

  • Applesauce instead of nut butter (lower-fat option)
  • Maple syrup or coconut sugar instead of monk fruit
  • Cacao nibs or chopped nuts instead of chocolate chips
  • Spelt or whole wheat flour (if gluten-free is not needed)
