Ingredients
  

  • 1 cup cottage cheese
  • 1 cup almond flour
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat the oven to 350°F. Line a medium-sized baking sheet with parchment paper.
  • In a small or medium food processor or blender, blend the cottage cheese until completely smooth.
  • In a mixing bowl, combine the blended cottage cheese, almond flour, Parmesan cheese, garlic powder, salt, and black pepper.
  • Mix until a dough forms. If it's too sticky, add a bit more almond flour.
  • Roll out the dough between two sheets of parchment paper to about ⅛-inch thickness.
  • Cut into small squares using a knife or pizza cutter.
  • Transfer the squares to the prepared baking sheet.
  • Bake for 20 minutes or until golden brown and crispy.
  • Let cool completely before serving or storing.

Notes

  • These cottage cheese crackers are best enjoyed with cottage cheese dip, hummus, or guacamole for extra protein and flavor.
  • For extra crispiness, leave the crackers in the oven (turned off) with the door slightly ajar for 10 minutes after baking.
  • Store in an airtight container at room temperature for up to 5 days.
