Cheddar Fondue with Irish Whiskey Recipe

Ingredients
  

  • 1 small garlic clove halved
  • 1 cup dry white wine
  • 12 ounces Gruyère cheese grated
  • 12 ounces aged cheddar cheese grated
  • 1 ½ tablespoons cornstarch
  • 1 to 2 tablespoons Irish whiskey or brandy optional
  • 1 tablespoon fresh lemon juice
  • Kosher salt and freshly ground black pepper to taste
  • Freshly grated nutmeg to taste (optional)

Instructions
 

  • Take the halved garlic clove and rub the cut side all over the inside of a large Dutch oven or a heavy-bottomed saucepan. Cover the bottom and sides partially with the garlic’s essence. Pour in the dry white wine and heat it over medium-high until it starts to simmer gently.
  • In a separate bowl, combine the grated Gruyère and cheddar cheeses with the cornstarch, tossing until the cheese is evenly coated. This helps prevent clumping when melted.
  • Gradually add the cheese mixture to the simmering wine, one handful at a time. Stir constantly after each addition, letting the cheese melt completely before adding more. Once all the cheese has been incorporated, reduce the heat to medium-low and continue stirring until the fondue becomes smooth and velvety.
  • If using Irish whiskey, pour it in along with the lemon juice, and stir for another 1 to 2 minutes until the mixture starts to bubble slightly.
  • Season the fondue to taste with salt, black pepper, and a dash of nutmeg, if desired. Serve the warm fondue immediately with your favorite dippers. If it begins to thicken or set, reheat it gently over low heat while stirring to restore its smooth consistency.

Notes

  • Substitute kirsch (cherry brandy) for Irish whiskey if preferred for a more traditional flavor.
  • For a smokier flavor, use smoked cheddar instead of aged cheddar.
  • Pair with crisp, light white wines or your favorite Irish stout for a complementary dining experience.
