Instructions
Preheat your oven to 350°F.
Warm a large skillet over medium-high heat and melt 1 tablespoon of butter. Add the turkey pieces and cook for about 1 to 2 minutes on each side, allowing them to brown lightly. Once seared, move the turkey to a shallow roasting pan.
Using the same skillet, melt the remaining tablespoon of butter. Stir in the fresh blueberries and cook them for around 1 minute. Pour in the balsamic vinegar and maple syrup, then stir to combine. Let the mixture come to a gentle boil, then lower the heat. Allow it to simmer without a lid until the blueberries have softened. Lightly mash the blueberries to release their juices and blend into the sauce.
Pour the blueberry sauce evenly over the turkey in the roasting pan.
Roast the turkey in the oven for approximately 30 to 40 minutes, or until the internal temperature reaches 165°F. After removing from the oven, let the turkey rest for 5 minutes.
Before serving, sprinkle with freshly chopped basil.
Notes
This carnivore diet-friendly turkey dish works beautifully for meal prep, as the flavors continue to deepen with time.
