For the Blueberry Mint Compote

  • 3 cups fresh blueberries
  • ½ cup packed brown sugar
  • 2 teaspoons fresh lemon juice
  • ¼ cup chopped fresh mint
  • ¼ teaspoon salt
  • ½ teaspoon tapioca

For the Biscuits

  • cup buttermilk

Instructions
 

Prepare the Compote

  • Rinse the blueberries under cold water, discarding any stems.
  • In a small saucepan over medium-high heat, combine the blueberries, brown sugar, lemon juice, mint, and salt. Stir well and let the mixture cook for about 10 minutes, stirring occasionally.
  • Reduce the heat to medium-low and let it simmer for an additional 5 minutes until it thickens slightly.
  • Stir in the tapioca, remove the saucepan from the heat, and let the compote sit. The texture will become syrupy but will thicken more as it cools.

Make the Biscuits

  • Preheat the oven to 450°F. Grease a baking sheet or a cast-iron skillet.
  • In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar (if using).
  • Add the egg, buttermilk, and melted butter, stirring just until the dough is combined. Be careful not to overmix.
  • Using a spoon, scoop eight portions of dough (about 2 to 3 tablespoons each) and drop them onto the greased baking sheet or skillet.
  • Brush the tops with buttermilk, then bake for 10 to 15 minutes, or until the biscuits turn golden brown.
  • Once out of the oven, brush them with a little extra melted butter for a rich finish.
  • Serve warm with the blueberry mint compote.
