  • Parchment paper
  • food processor
  • Measuring cups and spoons

Ingredients

For the Dough:

  • 1 cup all-purpose flour
  • 1 cup superfine almond flour
  • cup packed light brown sugar
  • ½ cup 1 stick unsalted butter, cold and cut into cubes
  • ½ teaspoon salt

For the Filling:

  • 2 cups fresh or frozen mixed berries such as blueberries, raspberries, blackberries, and strawberries
  • 2 tablespoons cornstarch
  • ¼ cup packed light brown sugar
  • 1 tablespoon freshly grated lemon zest from about 1 lemon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ¼ cup sliced almonds
  • Confectioners' sugar for topping (optional)

Instructions

Prepare the Dough:

  • Preheat your oven to 350°F. Line the bottom of a 9-inch round tart pan with parchment paper and lightly grease the sides with nonstick cooking spray.
  • In a food processor, combine all-purpose flour, almond flour, light brown sugar, cold butter cubes, and salt. Pulse until the mixture begins to form a clumpy dough.
  • Press two-thirds of the dough evenly onto the bottom and sides of the prepared tart pan. Use your fingers or a flat-bottomed object (like a measuring cup) to firmly pack the crust. Set aside.

Make the Filling:

  • In a large mixing bowl, combine the mixed berries, cornstarch, brown sugar, lemon zest, vanilla extract, and a pinch of salt. Gently toss until the berries are evenly coated.
  • Spread this berry mixture over the prepared crust in the tart pan.
  • Crumble the remaining one-third of the dough over the berry layer, creating a scattered topping. Sprinkle sliced almonds over the top.

Bake:

  • Place the tart in the preheated oven and bake for approximately 45 minutes, or until the crust is golden and the berry filling is bubbling.

Cool and Serve:

  • Remove the tart from the oven and let it cool completely in the pan.
  • Once cooled, carefully remove the tart from the pan, dust with confectioners' sugar (if using), slice, and serve.

Notes

  • You can use any combination of berries you like for this recipe, making it versatile for different seasons.
  • For a crispier topping, increase the sliced almonds.
  • If you prefer a sweeter filling, you can slightly increase the brown sugar.
