This one-pot recipe brings the flavors of a classic Greek gyro into your kitchen with ease. Ground lamb is formed into patties, cooked to perfection in a skillet, and paired with tzatziki sauce, crisp veggies, and warm pita bread for a flavorful and satisfying meal.
Prepare the pita crumbs: Preheat the oven to 350°F and position the rack in the middle. Cut off the top quarter of each pita bread and tear these pieces into 1-inch chunks (should yield about ¾ cup pita pieces). Stack remaining pitas and tightly wrap them in foil. Process the pita chunks with onion, lemon juice, oregano, garlic, salt, and pepper in a food processor until a smooth paste forms (about 30 seconds).
Make and cook the lamb patties: Transfer the mixture to a large bowl, add the ground lamb, and mix thoroughly with hands. Divide into 12 equal portions, roll into balls, then flatten slightly into patties (½ inch thick, about 2½ inches in diameter). Heat vegetable oil in a 12-inch nonstick skillet over medium-high heat.
