Ingredients
  

  • ½ cup jarred tomatillo or tomato salsa
  • 1 poblano chile stemmed, seeded, and chopped
  • teaspoon table salt
  • teaspoon pepper
  • ½ teaspoon minced fresh oregano or ⅛ teaspoon dried oregano
  • 1 pound boneless skinless chicken thighs, trimmed
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon lime juice
  • 6 6-inch flour tortillas, warmed

Instructions
 

  • In a slow cooker, combine salsa, poblano chile, salt, pepper, and oregano. Nestle the chicken into the mixture, cover, and cook on low for 4 to 6 hours until tender.
  • Using tongs, shred the chicken into bite-size pieces. Stir in the cilantro and lime juice, then season with additional salt and pepper to taste. Serve with warm tortillas.
