Ingredients
  

  • 2 pounds Yukon Gold potatoes peeled and sliced 1/2 inch thick
  • 3/4 teaspoon table salt plus additional for cooking potatoes
  • 3/4 cup half-and-half
  • 6 tablespoons unsalted butter
  • 1/2 teaspoon pepper

Instructions
 

  • Place the potatoes and 1 tablespoon salt in a large saucepan. Add enough water to cover the potatoes by 1 inch. Bring to a boil over high heat, then reduce to medium and simmer until the potatoes are tender and easily pierced with a knife, about 18–22 minutes.
  • In a separate microwave-safe liquid measuring cup, combine the half-and-half and butter. Microwave, covered, until the butter is melted and the mixture is warm to the touch, about 2 minutes.
  • Drain the potatoes and return them to the saucepan. Cook over low heat while stirring for about 30 seconds to remove excess moisture. Remove the pan from heat, then mash the potatoes using a potato masher until smooth with no lumps.
  • Stir in the half-and-half mixture, 3/4 teaspoon salt, and pepper. Mix until fully incorporated. Adjust seasoning with additional salt as needed. Serve immediately.
