Ingredients
  

  • 1 tablespoon extra-virgin olive oil plus extra for serving
  • 1 ½ pounds raw hot or sweet Italian chicken sausage
  • 2 shallots peeled, halved, and sliced thin
  • 3 garlic cloves minced
  • ½ cup dry white wine
  • ½ cup chicken broth
  • 2 15-ounce cans cannellini beans, rinsed
  • 1 14.5-ounce can diced tomatoes, drained
  • 1 sprig fresh rosemary
  • ¼ teaspoon pepper
  • 4 ounces 4 cups baby spinach
  • 2 ounces Parmesan cheese shaved

Instructions
 

Sauté Sausage:

  • Using the highest sauté or browning function on the electric pressure cooker, heat oil until just smoking.
  • Brown sausages on all sides, about 6 to 8 minutes.
  • Transfer sausages to a plate.

Build the Base:

  • Add shallots to the remaining fat in the pressure cooker, cooking until softened (about 1 minute).
  • Stir in garlic and cook until fragrant (about 30 seconds).
  • Stir in white wine, scraping up any browned bits.
  • Add broth, beans, tomatoes, rosemary, and pepper.
  • Nestle the sausages back into the pot, along with any accumulated juices.

Pressure Cook:

  • Lock lid in place and close the pressure release valve.
  • Select high pressure and cook for 4 minutes.
  • Turn off the pressure cooker and quick-release the pressure.
  • Carefully remove the lid, allowing steam to escape.

Finish and Serve:

  • Transfer sausages to a serving platter and tent with foil.
  • Stir spinach into the bean mixture, adding a handful at a time, until slightly wilted (about 1 minute).
  • Season with salt and pepper to taste.
  • Transfer the bean mixture to the platter with the sausages.
  • Sprinkle with Parmesan and drizzle with extra olive oil before serving.
