Prepare a medium bowl filled with ice water and set aside. In a small saucepan, mix the water and raw cane sugar. Heat gently over low heat, stirring occasionally, until the sugar fully dissolves.
Take the saucepan off the heat and place it into the ice water bath to cool the syrup quickly. Stir occasionally to help it chill evenly. Alternatively, refrigerate the syrup for about 3 hours until thoroughly chilled. If not using immediately, store it in an airtight container in the refrigerator for up to 2 weeks.
In a medium bowl, combine the lime juice with 1 cup of the prepared chilled syrup. Add the lime zest and stir until well mixed. If making the mojito-inspired variation, fold in the finely chopped mint.
Transfer the lime mixture into an ice cream maker and churn it following the manufacturer's instructions, typically for about 20–30 minutes.
Once the mixture reaches a soft, sorbet-like consistency, move it to a freezer-safe container. Cover and freeze for at least 3 hours or until the sorbet is fully set.
Serve the lime sorbet chilled as a refreshing, anti-inflammatory dessert. Enjoy its vibrant citrus flavor on its own or as a light palate cleanser.
