- 4 pounds boneless pork butt roast trimmed, and cut into 1 1/2-inch pieces
- 2 cups chicken broth plus extra as needed
- 1/2 cup brewed coffee
- 1 tablespoon packed brown sugar plus extra for seasoning
- 2 bay leaves
To Finish
- 1/2 cup raisins
- 1/4 cup minced fresh cilantro
- 1 teaspoon grated lime zest plus 1 tablespoon juice plus extra for seasoning
